Make My Recipe: Ultimate Avocado Toast!

Yay! This is my first simple recipe that I have posted for you, so I decided to make something that everyone adores.... AVOCADO TOAST!

But this is not just any avo toast. This is my ultimate recipe!

Avocados are a fantastic source of healthy fats and fibre that keeps you full for longer and provides you with long-lasting energy throughout your day. (FACT: they are also super delicious!) So it only makes sense that they are the perfect breakfast addition.

My ULTIMATE AVOCADO TOAST gives you a great balance of ingredients to kick off your day.

You have wholegrains in the bread, protein in the eggs, vegetables in the leafy greens, dairy in the goat's curd and of course: healthy fats in the avocado!

ULTIMATE AVOCADO TOAST

Serves: 1 / Difficulty: easy cheesy / Ready in: 10 minutes

Ingredients:

- pinch of salt (optional)

- a splash of white or apple cider vinegar

- 2 eggs

- 1 slice of wholegrain bread or rye sourdough

- 1/2 an avocado

- 2 tablespoons goats curd (curd is easier to spread than cheese)

- a drizzle of olive oil (optional)

- sprinkle of dukkah (seed mix available at the supermarket or make your own: dukkah recipe)

- your choice of leafy greens

- additional salt and pepper to serve (optional)

Method:

1. Fill a small-medium sized saucepan 2/3 of the way with water, sprinkle in the salt and put on medium-high heat with the lid on. While you are waiting for the water to boil, take out your other ingredients.

2. Once the water is boiling, tip a splash of vinegar into the water and stir it in. Crack your two eggs into the water and set a timer for 3 minutes.

3. Place your slice of bread into a toaster. Once it is toasted, put on a plate and spread on the avocado and goats curd. Lightly drizzle olive oil onto the toast and sprinkle with dukkah.

4. Once the timer goes off for the eggs, use a draining spoon (with holes in it) to scoop out the eggs. Alternatively, you can pour the eggs into a sieve over a sink. Once all the excess water has been drained from the eggs, place onto the plate next to (or on top of) your toast.

5. Add the leafy greens to your plate and season with salt and pepper.

I love this recipe, and the secret ingredient really is the goat's curd, so make sure you include it. I've tried this with pesto instead and even though I LOVE pesto, it does not top the goats curd.
